1. In a preheated wok, heat the oil, then toss in the shrimp and stir-fry over high heat for about 4 minutes. Arrange the shrimp on the sides of the wok out of the oil, then throw in the gingerroot and garlic and stir until fragrant. Add the scallion and chili bean sauce. Stir the shrimp into this mixture. 2. Lower the heat slightly and add the Shaoxing, sugar, light soy sauce, and a little chicken stock. Cover and cook for an additional minute. Serve immediately. |
