1. Start by washing the clams thoroughly. Then let the clams soak in clean water until it is time to drain them and toss them in the wok. 2. In a preheated wok, heat the oil adn stir-fry the gingerroot and garlic until fragrant. Add the black beans and cook for 1 minute. 3. Over high heat, add the clams and Shaoxing and stir-fry for 2 minutes to mix everything together. Cover and cook for about 3 minutes. Add the scallion and salt, if necessary, and serve immediately. |
