1. combine the ground meats with 1 teaspoon of the light soy sauce and the salt. 2. In a preheated wok, heat the oil and cook the ground meats until beginning to brown. Add the chili paste and stir rapidly. Stir in the dark soy sauce. 3. Pour in the stock, noodles, and remaining light soy sauce. Cover the wok and simmer for about 8-10 minutes, or until the wok is quite dry. Shake the wok but do not stir. Toss in the scallions and serve. |
