Clams In Black Bean Sauce

2 lb small clams
1 tbsp vegetable or peanut oil
1 tsp finely chopped fresh gingerroot
1 tsp finely chopped garlic
1 tbsp fermented black beans, rinsed and coarsely chopped
2 tsp Shaoxing rice win
1 tbsp finely chopped scallion
1 tsp salt (optional)

1. Start by washing the clams thoroughly. Then let the clams soak in clean water until it is time to drain them and toss them in the wok.

2. In a preheated wok, heat the oil adn stir-fry the gingerroot and garlic until fragrant. Add the black beans and cook for 1 minute.

3. Over high heat, add the clams and Shaoxing and stir-fry for 2 minutes to mix everything together. Cover and cook for about 3 minutes. Add the scallion and salt, if necessary, and serve immediately.
