Yaki Soba

14-oz ramen noodles
1 onion, finely sliced
1-1/3 cups bean sprouts
1 red bell pepper, seeded and finely shredded
1 boneless, skin-on cooked chicken breast, about 5-1/2 oz cooked and sliced
12 cooked shelled shrimp
1 tbsp oil
2 tbsp shoyu (Japanese soy sauce)
1/2 tbsp mirin
1 tsp sesame oil
1 tsp roasted sesame seeds
2 scallions, finely sliced

1. Cook the noodles according to the package instructions, drain well, and tip into a bowl.

2. Mix the onion, bean sprouts, red bell pepper, chicken, and shrimp together in a separate bowl Stir through the noodles.

3. Preheat a wok over high heat. Add the oil and heat until very hot. Add the noodle and mixture and stir-fry for 4 minutes, or until golden, then add the shoyu, mirin, and sesame oil and toss together.

4. Divide the mixture between 2 plates, sprinkle with the sesame seeds and scallions, and serve at once.
